Cutlery Knives
For preparing food there are specialized knives called
cutlery knives
that are specially designed for chopping, dicing and slicing many types
of food, such as meat and vegetables. Cutlery is sometimes used for
all table tools, such as silverware and flatware, but is more commonly
associated with preparation tools such as knives.
Most cutlery knives are made from stainless steel, although in the
past silver, steel and pewter were common. The word cutlery comes from
old English and French words for knife. An early method for making cutlery
involved sandwiching a piece of hard brittle steel between softer steel
for a hard edge and more durability.
Cutlery knives come in many shapes and sizes, the largest being a butchers
knife which is heavy and sharp and used for cutting large pieces of
meat including the bone. The smallest cutlery knives are used for peeling
and other intricate work such as flowering a radish. The most common
chef’s knife is about a foot long with a sharp point and a slightly
rockered blade for easy chopping.
